There is always the sky \u2013 that vast expanse above us which we often accept without marveling at.\u00a0 I suggest gazing at the sky with fresh eyes at all times of day and night as if you were again a child and had not become so familiar with it that you can easily think you \u201dknow\u201d the sky.\u00a0 What a wonder!<a href=\"http:\/\/yang-sheng.com\/wp-content\/uploads\/2011\/07\/Five-Element-Theory.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-3592\" title=\"Five Element Theory\" src=\"http:\/\/yang-sheng.com\/wp-content\/uploads\/2011\/07\/Five-Element-Theory.jpg\" alt=\"\" width=\"384\" height=\"289\" srcset=\"https:\/\/yang-sheng.com\/wp-content\/uploads\/2011\/07\/Five-Element-Theory.jpg 480w, https:\/\/yang-sheng.com\/wp-content\/uploads\/2011\/07\/Five-Element-Theory-300x225.jpg 300w\" sizes=\"auto, (max-width: 384px) 100vw, 384px\" \/><\/a><\/p>\n<p><strong><em>Eat Seasonal, Buy Local, Think Global!<\/em><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Some foods for the late summer<\/span><\/strong>: Almond, Apple, Barley, Blueberries Buckwheat, Cabbage, Carrots, Cherry, Chestnuts, Chicken, Chive, Coconut, Cooked onion, Corn, Cow\u2019s milk, Crab, Cucumber, Dates, Duck eggs, Eggplant, Figs, Fruits (sweeter), Garlic, Ginger, Grapes, Hazelnuts, Honey, Job\u2019s tears, Lamb, Licorice, Lotus root, Mangos, Melons, Millet, Molasses, Mushrooms (especially button mushrooms), Oats, Oranges, Peanuts, Peaches, Peas, Potato, Pumpkins, Red Chinese Dates (Jujube), Rye, Squashes, Strawberry, Sugar, Sweet potatoes, Water chestnut, Watermelon<\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"text-decoration: underline;\">RECIPES<\/span><\/strong><strong>:<\/strong><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Lotus Root Stir Fry*<\/span><\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"http:\/\/thecouponproject.com\/wp-content\/uploads\/2011\/01\/LotusRoot-13.jpg\" alt=\"\" width=\"311\" height=\"233\" \/>2 TB grapeseed oil<\/li>\n<li>3 cups of lotus root sliced into thin circles<\/li>\n<li>1\/3 cup scallion whites cut into 1\u201d pieces<\/li>\n<li>1 cup sweet red pepper cut into julienne strips<\/li>\n<li>1 cup sliced mushroom<\/li>\n<li>1 TB soy sauce<\/li>\n<li>1 TB honey<\/li>\n<li>2 TB rice vinegar<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>Heat your wok\/skillet and add oil. Coat the bottom of the wok\/skillet with oil.\u00a0 When hot, add lotus root and cook for a couple of minutes.\u00a0 Then add the scallions, mushrooms and red pepper \u2013 stir fry until they just begin to wilt. Add the seasonings and cook well.<\/p>\n<p>Serves 4.<\/p>\n<p>*Specialty food markets such as Whole Foods and Trader Joes as well as higher end supermarkets have begun to carry frozen sliced lotus root.\u00a0 If you are not near an Asian market, this might be a viable alternative.<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Basic Marinade for Vegetables for grilling\/broiling<\/span><\/strong><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong><\/p>\n<ul>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"http:\/\/img4.myrecipes.com\/i\/recipes\/ck\/03142008\/grilled-vegetables-ck-222862-l.jpg\" alt=\"\" width=\"240\" height=\"240\" \/>2 TB grapeseed oil<\/li>\n<li>6 TB water<\/li>\n<li>1\/4 cup honey<\/li>\n<li>1\/2 cup mushroom flavored soy sauce<\/li>\n<li>1\/4 cup black vinegar (or balsamic)<\/li>\n<li>2 tsp. Worcestershire sauce<\/li>\n<li>1 tsp finely minced ginger<\/li>\n<li>1\/2 tsp finely minced garlic<\/li>\n<li>some black pepper<\/li>\n<\/ul>\n<p>Variations can include: the addition of any of the following: Toasted Sesame oil, finely minced cilantro\/parsley\/ celery leaves\/sesame seeds\/lemon juice &#8211; use your imagination.<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Directions<\/span><\/strong><\/p>\n<p>Whisk together, set aside for at least 2 hours turning occasionally so that flavors can meld together.\u00a0 Then add vegetables and marinade for about 1 hour making certain veggies are well coated.<\/p>\n<p>This marinade is great to make in advance to\u00a0have in the refrigerator.<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Eggplant Squares<\/span><\/strong><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<\/p>\n<p><span style=\"font-size: 16px; font-family: Georgia, 'Bitstream Charter', serif; line-height: 24px;\">A. <\/span><\/p>\n<ul>\n<li>3 cups diced tomatoes<\/li>\n<li>Finely minced white of one large scallion<\/li>\n<li>Finely minced medium clove garlic<\/li>\n<li>1 cup roughly chopped cilantro leaves<\/li>\n<li>\u00bd tsp dried savory leaves<\/li>\n<li>\u00bc tsp salt<\/li>\n<li>1\/8 tsp ground black pepper (and\/or red pepper flakes)<\/li>\n<li>Enough lightweight oil to coat bottom of your baking dish \u2013 preferably Pyrex \u2013 and not metal (9 x 6 works with this much food)<\/li>\n<\/ul>\n<p>B.<\/p>\n<ul>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"http:\/\/livbites.com\/wp-content\/uploads\/2011\/01\/EggplantZucchini.jpg\" alt=\"\" width=\"288\" height=\"192\" \/>1 small eggplant<\/li>\n<li>1 small zucchini<\/li>\n<li>1 small yellow summer squash<\/li>\n<li>2 cups of julienned red bell pepper<\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline;\">Directions<\/span><\/strong><\/p>\n<ol>\n<li>Heat your oven to 400 degrees.<\/li>\n<li>Mix together all the A. ingredients in a bowl, cover and set aside. (You will have about 4 cups of mixture)<\/li>\n<li>Peel and very thinly slice your eggplant lengthwise<\/li>\n<li>Cut the zucchini and the yellow squash lengthwise<\/li>\n<li>Put a layer of eggplant on the bottom of the baking dish<\/li>\n<li>Coat lightly with 1-1\/2 cups of tomato mixture<\/li>\n<li>Put a layer of zucchini and coat with 1 cup of tomato mixture and do the same with the yellow squash and tomato mixture in between ending with a layer of eggplant on top and lightly putting the remaining \u00bd cup or so on top of the last layer of eggplant.\u00a0 Then arrange the julienned red pepper on the top of the entire dish.<\/li>\n<li>Cover with foil and bake for 45 minutes to one hour at 400 degrees.<\/li>\n<li>Remove from oven, let it rest, cut into squares and serve.<\/li>\n<\/ol>\n<p><em>Toasted mixed nuts and seeds make a nice touch on this dish after it is cooked so that they retain their crunch. <\/em><\/p>\n<p><strong><span style=\"text-decoration: underline;\">TEAS: <\/span><\/strong><\/p>\n<p>Looking for a refreshing, cooling, sweet tea?\u00a0 Red dates and chrysanthemums with a sprig of fresh mint and perhaps sweetened with a bit of rock sugar (although the dates and flowers are pretty sweet on their own) can be just what you want on a hot and humid day.\u00a0 When making this tea, do not boil the water.\u00a0 Allow the dates, chrysanthemum flowers and mint sprig to steep in hot water for a 3-5 minutes. Use a couple of dates and a few flowers per cup\/glass.\u00a0 This is also a pretty tea that you might enjoy having in a tall glass so you can also have a lovely visual \u201cdrink.\u201d Here is a large pot steeping for company.<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Health Topic<\/span><\/strong> <strong><span style=\"text-decoration: underline;\">Stress\/Over Thinking- Worry: <\/span><\/strong>The mayor in Lancaster, CA says there&#8217;s science to show that listening to birdsong makes people happier. Did this \u201cnews brief\u201d bring a smile or a critical assessment of the plan?<\/p>\n<p>Over thinking\/Excess concern create inner tension\/constriction, reducing the flow of energy throughout our system and over time can create energy stagnation if this becomes a way of life and a habit. Do you over think\/Worry about situations?\u00a0 Take two minutes to sit quietly with your eyes closed and just breathe.\u00a0 Not in any special way, but only focusing on your breathing in and out allowing it to become deeper and more relaxed as a natural progression.
