We are all happy to have left the cold of winter and the windy storms of spring behind, to shed our overcoats and feel the sun shining on us. The setting of Early Summer, with flowers and foods coming forth in an array of color, blue skies, sunshine, green leaves, and more all add to an uplifted feeling. Even anticipation of summer is invigorating!\u00a0 However, the healthy Joy of summer is an internal joy that is not explosive but rather flows from a harmonious heart.<\/p>\n<p>In order to have harmony in our lives, the elements that create harmony must be present as harmony is the result of an overall effect of the interrelationship of smaller parts. The harmony that is present at any moment is the reflection of how the pieces come together in a combination that says, in part, there is balance here, there is peacefulness here, there is purposefulness, there is unity here, there is centeredness here, there is Life here. We recognize Harmony through the presence of a pleasant appeal to who we are. The achievement of Harmony in our lives or an endeavor, such as the preparation of a meal, becomes a tacit invitation to all to partake of something uplifting and encouraging to be ever more integrated.<\/p>\n<p><span style=\"color: #000000;\"><a href=\"http:\/\/yang-sheng.com\/?attachment_id=9186\" rel=\"attachment wp-att-9186\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-9186\" alt=\"kling photo 1\" src=\"http:\/\/yang-sheng.com\/wp-content\/uploads\/kling-photo-1-300x225.png\" width=\"300\" height=\"225\" srcset=\"https:\/\/yang-sheng.com\/wp-content\/uploads\/kling-photo-1-300x225.png 300w, https:\/\/yang-sheng.com\/wp-content\/uploads\/kling-photo-1.png 480w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #000000;\">The Fire element of this season is seen in such things as people\u2019s passion, strength, and courage when in balance, while an over excitable expression or its seemingly opposite, depression when not in balance. When the heart\u2019s energy is balanced, the result is the ability to think clearly, remember well, and sleep well.<\/span><\/p>\n<p><span style=\"color: #000000;\">The tongue, which is the outer organ of the Heart\/Small Intestine system, is used in Chinese medicine as an important diagnostic tool.\u00a0 By examining the tongue, one\u2019s state of health can be quickly assessed. The tip of the tongue reflects the state of health, both physical and emotional as it relates to the heart and fire element. (For more information on tongue diagnostics: <a href=\"http:\/\/www.shen-nong.com\/eng\/exam\/exam_diagnostic_inspection.html\"><span style=\"color: #000000;\">http:\/\/www.shen-nong.com\/eng\/exam\/exam_diagnostic_inspection.html<\/span><\/a>).<\/span><\/p>\n<p>Among the various \u201cdangers\u201d of this season, is Summer Heat, which is one of the six external pathogenic forces (cold\/wind\/damp\/dryness\/fire\/summer heat). This particular heat only exists in the summer season. It has to do with an overabundance of Yang Heat and some of its symptoms include high fever, red face, abundant sweating (not from physical exertion), intense listlessness, nausea. It is important in summer to eat cooling foods, drink fluids that are not ice cold, dress appropriately. In hot weather it is advisable to eat lightly, drinking teas such as Chrysanthemum tea and eat foods such as mung beans both of which help wick away heat.<\/p>\n<p>I\u2019ve been told that the direction of South for the heart came about because the Heart is considered the King\/Monarch of the organ systems, and that the Emperor always faced south at important events.<\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"color: #000000;\">Some General Guidelines for Healthy Eating<\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\">Eat foods that are natural to the season in the area where you live.<\/span><\/p>\n<p><span style=\"color: #000000;\">As much as possible eat \u201clocal\u201d foods.<\/span><\/p>\n<p><span style=\"color: #000000;\">Try to have each of the five tastes throughout your day, if not at each meal.<\/span><\/p>\n<p><span style=\"color: #000000;\">Avoid late meals for better digestion.<\/span><\/p>\n<p><span style=\"color: #000000;\">Avoid heavily processed and\/or greasy foods.<\/span><\/p>\n<p><span style=\"color: #000000;\">Avoid cold liquids and foods \u2013 the stomach likes warm foods.<\/span><\/p>\n<p><span style=\"color: #000000;\">Eat primarily cooked foods \u2013 overeating raw foods can impair digestion and create dampness.<\/span><\/p>\n<p><span style=\"color: #000000;\">Choose a pleasant place to eat.<\/span><\/p>\n<p><span style=\"color: #000000;\">Eat slowly \u2013 chew your food carefully.<\/span><\/p>\n<p><span style=\"color: #000000;\">Don\u2019t eat and work at the same time.<\/span><\/p>\n<p><span style=\"color: #000000;\">A simple meal eaten in a calm environment is better than an \u201cexotic\u201d meal eaten in distraction.<\/span><\/p>\n<p><span style=\"color: #000000;\">Eat until 70% full.<\/span><\/p>\n<p><span style=\"color: #000000;\">Eat a quality breakfast, a large lunch, and a light dinner.<\/span><\/p>\n<p><span style=\"color: #000000;\">Avoid nomadic eating \u2013 sit down rather than eating while walking\/driving\/standing.<\/span><\/p>\n<p><span style=\"color: #000000;\">Listen to your body \u2013 learn to follow your intuition.<\/span><\/p>\n<p><span style=\"color: #000000;\">Some Foods That Are Harmonious With Early Summer Include: apricot, beet, bitter melon, black coffee, broccoli, celery, coffee, cucumber, dark unsweetened chocolate, escarole, ginger, job&#8217;s tears, lettuces such as Boston, chicory, endive &amp; romaine, lemon balm, loquat, lotus root, lotus seed, mulberries, mung bean, okra, peach, peppermint, persimmons, pumpkin, radishes, red lentils, red peppers, red plums, rhubarb, soy beans, spinach, strawberry, summer squashes, tamarind, teas, tomato, water chestnuts, watermelon, Chinese yam, zucchini, and others.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"color: #000000;\">RECIPES<\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\"><strong>Watermelon\/ginger juice\u00a0<\/strong><a href=\"http:\/\/yang-sheng.com\/?attachment_id=9187\" rel=\"attachment wp-att-9187\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-9187\" alt=\"watermelon\" src=\"http:\/\/yang-sheng.com\/wp-content\/uploads\/watermelon-300x199.jpg\" width=\"300\" height=\"199\" srcset=\"https:\/\/yang-sheng.com\/wp-content\/uploads\/watermelon-300x199.jpg 300w, https:\/\/yang-sheng.com\/wp-content\/uploads\/watermelon.jpg 400w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #000000;\">Ingredients:<\/span><\/p>\n<address><span style=\"color: #000000;\">\u00bd cup water<\/span><\/address>\n<address><span style=\"color: #000000;\">4 cups of watermelon (include some of the rind)<\/span><\/address>\n<address><span style=\"color: #000000;\">2 TB fresh ginger root<\/span><\/address>\n<address><span style=\"color: #000000;\">tiny pinch of salt<\/span><\/address>\n<p><span style=\"color: #000000;\">Directions:<\/span><\/p>\n<p><span style=\"color: #000000;\">Place all of the ingredients in a blender and juice. You can add more water if you like to make it more \u201cliquid,\u201d but do not add ice. The addition of a tiny pinch of salt will enhance the sweetness of the watermelon. This is so refreshing and delightful on hot days. Watermelon can also aid in balancing weight.<\/span><\/p>\n<p><strong><span style=\"color: #000000;\">Escarole and White Bean Soup<\/span><\/strong><\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"color: #000000; text-decoration: underline;\">Ingredients:<\/span><\/span><\/p>\n<address><span style=\"color: #000000;\">2 large bunches of escarole<\/span><\/address>\n<address><span style=\"color: #000000;\">3 Tb walnut or grapeseed oil<\/span><\/address>\n<address><span style=\"color: #000000;\">2 cloves of garlic \u2013 sliced lengthwise<\/span><\/address>\n<address><span style=\"color: #000000;\">2 thin slices of ginger<\/span><\/address>\n<address><span style=\"color: #000000;\">5 thin scallion whites sliced finely<\/span><\/address>\n<address><span style=\"color: #000000;\">Salt &amp; pepper<\/span><\/address>\n<address><span style=\"color: #000000;\">3 cups water<\/span><\/address>\n<address><span style=\"color: #000000;\">1 15 oz. can of small white beans (cannellini, navy, small white) or your own cooked beans<\/span><\/address>\n<address><span style=\"color: #000000;\">\u00bd lemon<\/span><\/address>\n<p><a style=\"color: #ff4b33; line-height: 24px; font-size: 16px;\" href=\"http:\/\/yang-sheng.com\/?attachment_id=9188\" rel=\"attachment wp-att-9188\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-9188\" alt=\"ginger\" src=\"http:\/\/yang-sheng.com\/wp-content\/uploads\/ginger-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/yang-sheng.com\/wp-content\/uploads\/ginger-300x200.jpg 300w, https:\/\/yang-sheng.com\/wp-content\/uploads\/ginger-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Directions:<\/p>\n<p><span style=\"color: #000000;\">Carefully wash the escarole in cold water and drain. \u00a0\u00a0<\/span><span style=\"color: #000000;\">Cut the escarole in horizontal ribbons about 1-1\/2\u201d wide. \u00a0<\/span><span style=\"color: #000000;\">Heat your wok\/heavy skillet and add the oil and heat it. \u00a0<\/span><span style=\"color: #000000;\">Add the garlic, ginger, scallions and saut\u00e9 for a couple of minutes until begin to sweat. \u00a0<\/span><span style=\"color: #000000;\">Add Salt and Pepper. \u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\">Add the escarole and toss with the garlic\/ginger\/scallions.<\/span><\/p>\n<p><span style=\"color: #000000;\">Add the water and cover and let simmer on medium heat for about 5 minutes.<\/span><\/p>\n<p><span style=\"color: #000000;\">Add the beans, toss through the escarole, adjust liquid.<\/span><\/p>\n<p><span style=\"color: #000000;\">Heat through and add the juice of the lemon right before serving.<\/span><\/p>\n<p><span style=\"color: #000000;\">The slightly bitter taste of the escarole acts as an anti-inflammatory, and can help to reduce dampness. The bland flavor of the beans and the tart lemon juice balance the bitter of the flavor.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"color: #000000;\">Baked Eggs and Greens<\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\">Ingredients:<\/span><\/p>\n<address><span style=\"color: #000000;\">1 cup dill leaves<\/span><\/address>\n<address><span style=\"color: #000000;\">1 cup flat parsley leaves or cilantro leaves<\/span><\/address>\n<address><span style=\"color: #000000;\">1 cup celery leaves (using the outer and the inner leaves)<\/span><\/address>\n<address><span style=\"color: #000000;\">\u00bd cup finely chopped scallion whites with just a bit of the light green<\/span><\/address>\n<address><span style=\"color: #000000;\">\u00bc cup mint leaves<\/span><\/address>\n<address><span style=\"color: #000000;\">1 cup lightly toasted walnuts<\/span><\/address>\n<address><span style=\"color: #000000;\">6 large eggs<\/span><\/address>\n<address><span style=\"color: #000000;\">2-3 Tb cold water<\/span><\/address>\n<address><span style=\"color: #000000;\">1 Tb turmeric<\/span><\/address>\n<address><span style=\"color: #000000;\">\u00bd Tb salt (or less)<\/span><\/address>\n<address><span style=\"color: #000000;\">\u00bd Tb fresh ground pepper (or less)<\/span><\/address>\n<address><span style=\"color: #000000;\">1-1\/2 Tb baking powder (aluminum free \u2013 preferably)<\/span><\/address>\n<address><span style=\"color: #000000;\">9\u201d pie dish or 9 x 12 baking dish<\/span><\/address>\n<address><span style=\"color: #000000;\">Parchment paper to line<\/span><\/address>\n<address><span style=\"color: #000000;\">Oil to lightly coat parchment paper (if no parchment paper, coat well the bottom of pan w\/oil)<\/span><\/address>\n<address><span style=\"color: #000000;\">Lemon wedges\u00a0<\/span><\/address>\n<address>\u00a0<\/address>\n<p><span style=\"color: #000000;\">Directions:<\/span><\/p>\n<p><span style=\"color: #000000;\">Heat oven to 400 degrees. \u00a0<\/span><span style=\"color: #000000;\">Carefully pick the LEAVES ONLY off the dill, parsley and celery and mint NO STALKS! \u00a0<\/span><span style=\"color: #000000;\">Chop roughly set aside in a bowl. \u00a0\u00a0<\/span><span style=\"color: #000000;\">Put the walnuts in a plastic bag and crush them with a rolling pin or heavy jar (honey jar, e.g.). \u00a0\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\"><a href=\"http:\/\/yang-sheng.com\/?attachment_id=9189\" rel=\"attachment wp-att-9189\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-9189\" alt=\"nuts\" src=\"http:\/\/yang-sheng.com\/wp-content\/uploads\/nuts-300x209.jpg\" width=\"300\" height=\"209\" srcset=\"https:\/\/yang-sheng.com\/wp-content\/uploads\/nuts-300x209.jpg 300w, https:\/\/yang-sheng.com\/wp-content\/uploads\/nuts.jpg 400w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/span><\/p>\n<p>The walnuts should be very small pieces and some very fine, a mixture of textures. Add to the leaves.<\/p>\n<p><span style=\"color: #000000;\">Lightly beat together the eggs, salt;\/pepper, turmeric and cold water.<\/span><\/p>\n<p><span style=\"color: #000000;\">Prepare the baking dish: line with parchment paper.<\/span><\/p>\n<p><span style=\"color: #000000;\">Stir the baking powder into the eggs and immediately add the leaves and nut mixture to the egg white and mix together.<\/span><\/p>\n<p><span style=\"color: #000000;\">Pour into the baking dish* and put in the oven. \u00a0\u00a0<\/span><span style=\"color: #000000;\">Bake at 400 for about 30-45 minutes.\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\">Serve with lemon wedges.<\/span><\/p>\n<p><span style=\"color: #000000;\">Whole eggs are said to bring harmony to the organ functions, calm the mind, clear away excessive heat, and can aid in alleviating long term dry coughs among many other things.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><strong>Beet Soup\u00a0<\/strong><a href=\"http:\/\/yang-sheng.com\/?attachment_id=9190\" rel=\"attachment wp-att-9190\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-9190\" alt=\"beetroot\" src=\"http:\/\/yang-sheng.com\/wp-content\/uploads\/beetroot-300x198.jpg\" width=\"300\" height=\"198\" srcset=\"https:\/\/yang-sheng.com\/wp-content\/uploads\/beetroot-300x198.jpg 300w, https:\/\/yang-sheng.com\/wp-content\/uploads\/beetroot.jpg 400w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #000000;\">Ingredients:<\/span><\/p>\n<address><span style=\"color: #000000;\">Two cups grated or julienne beets \u2013 easiest to cut this way after cooked<\/span><\/address>\n<address><span style=\"color: #000000;\">1 quart water<\/span><\/address>\n<address><span style=\"color: #000000;\">1 bay leaf<\/span><\/address>\n<address><span style=\"color: #000000;\">A pinch sea salt<\/span><\/address>\n<address><span style=\"color: #000000;\">Cucumber slices (cool)\u00a0 optional<\/span><\/address>\n<address><span style=\"color: #000000;\">A few sprigs of dill (disperses qi) optional<\/span><\/address>\n<p><span style=\"color: #000000;\">Directions:<\/span><\/p>\n<p><span style=\"color: #000000;\">Cook the beets in the water with the bay leaf and salt until the beets are tender. \u00a0\u00a0<\/span><span style=\"color: #000000;\">Decorate with cucumber slices and a little dill. \u00a0<\/span><span style=\"color: #000000;\">Beets relieve Liver stagnation; promote circulation, support Heart function. This soup is also very refreshing on a hot day. \u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"color: #000000;\">Mung Beans and Chinese Chives With Yellow Flowers<\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\">Ingredients:<\/span><\/p>\n<address><span style=\"color: #000000;\">4 cups uncooked mung bean sprouts<\/span><\/address>\n<address><span style=\"color: #000000;\">2 cups yellow flowered Chinese Chives<\/span><\/address>\n<address><span style=\"color: #000000;\">2 eggs, lightly beaten<\/span><\/address>\n<address><span style=\"color: #000000;\">1\/4 teaspoon salt<\/span><\/address>\n<address><span style=\"color: #000000;\">\u00bc cup oil for stir-frying<\/span><\/address>\n<address><span style=\"color: #000000;\">1-1\/2 Tb minced fresh ginger<\/span><\/address>\n<address><span style=\"color: #000000;\">2 teaspoons soy sauce<\/span><\/address>\n<address><span style=\"color: #000000;\">1\/2 teaspoon sugar<\/span><\/address>\n<address>\u00a0<\/address>\n<p><span style=\"color: #000000; font-size: 1.2em; line-height: 1.5em;\">Directions:<\/span><\/p>\n<p><span style=\"color: #000000;\">Wash and drain the mung bean sprouts and chives. \u00a0<\/span><span style=\"color: #000000;\">Cut the chives into 4\u201d pieces. \u00a0<\/span><span style=\"color: #000000;\">In a small bowl, lightly beat the eggs with the salt. \u00a0<\/span><span style=\"color: #000000;\">Heat a wok or heavy skillet and coat bottom with 1-1\/2 TB oil. \u00a0<\/span><span style=\"color: #000000;\">Add the eggs and so that they cover the bottom of the pan like a pancake. \u00a0\u00a0<\/span><span style=\"color: #000000;\">Turn them over gently and the cut into thin strips and set aside on a platter.<\/span><\/p>\n<p><span style=\"color: #000000;\">Add 2 Tb oil and add the minced ginger when the oil is hot.<\/span><\/p>\n<p><span style=\"color: #000000;\">Add the mung bean sprouts and stir-fry for about 1 minute then add the rest of the ingredients. Stir-fry for about another 1 &#8211; 2 minutes, until the chives just begin to be limp<\/span><\/p>\n<p><span style=\"color: #000000;\">Transfer to a platter and top with the strips of egg.<\/span><\/p>\n<p><span style=\"color: #000000;\">Chives are an aid to digestion, blood circulation and have antiseptic properties.
